My family ate fries almost everyday. We even had our own french fry cutter and electric potato peeler. We loved fries so much that when we picked up burgers, we bought extra fries for the way home.

My first visit to a Belgian frites place in New York really opened my eyes to how good fries could be. Fries, I learned, didn’t have to be a side dish.

I decided that New Mexico needed a place where fries play the starring role.

I experimented with methods from around the world to get the perfect fry and borrowed from both European and American styles.
